The giant corn of Cusco is a giant white grain of circular flat form, with a soft floury texture. It is produced in the sacred valleys of the Incas in Urubamba. It is a highly energetic cereal and very rich in digestible nutrients. It provides proteins and minerals such as calcium, iron and phosphorus, contains mainly vitamins A, B and E and is a good source of carbohydrates, mostly polysaccharides. They are usually consumed in cereals, flour and snacks.
