Quinoa is known as the "superfood", considered one of the Andean grains richest in protein, obtained by a process of cutting, threshing, polishing and classification. It is a nutraceutical grain for its nutritional and medicinal qualities, and thanks to this it enjoys a growing demand in the national and foreign markets. It can contain up to 23%, more than twice the protein of any other cereal. The proteins contained are close to the percentage dictated by the FAO for human nutrition.
