Wagyu es una variedad de raza bovina originaria de Japón, criada de forma única desde la antigüedad. La definición de Wagyu está estrictamente establecida: las únicas vacas que pueden llamarse Wagyu son de cuatro tipos: negro japonés (黒毛 和種 Kuroge Washu),marrón japonés (褐毛和種 Akage Washu), cuernos cortos japonés (日本短角種 Nihon Tankaku Shu), y japonés moteada (無角和種 MukakuWashu); también existen mezclas de estos cuatro tipos.
Cada Wagyu cuenta con un número de identificación de 10 dígitos, establecido individualmente en el que se especifica su trazabilidad y al mismo tiempo constituye un certificado de origen del animal. Wagyu es una carne de res única en el mundo, que forma parte de menús exquisitos de los restaurantes más prestigiosos, posicionados en la guía Micheline y en la lista de “Los 50 mejores restaurantes del mundo” de San Pellegrino. -
