PIECES OF COCOA FROM DIFFERENT ORIGINS IN PERU WORKED DIRECTLY WITH THE FARMERS IN EACH PRODUCTION ZONE. THE TREATMENT IN THE ROASTING STAGE WILL DEPEND ON THE CLIENT'S REQUIREMENT; WE MOSTLY WORK WITH ROASTING PROFILES BETWEEN 100 AND 150 °C AND, IN SOME CASES, WE PROCEED ONLY TO STERILIZE THE BEANS TO OBTAIN RAW NIBS. THE COCOA USED COMES FROM DIFFERENT PRODUCTION AREAS, GOING THROUGH RIGOROUS SELECTION, HARVESTING AND POST-HARVESTING PROTOCOLS UNTIL THE DRY COCOA IS OBTAINED.
